Wow!

We refinished our floors! (finally!) Left is before, right is after. Just in case you couldn't tell.. ;)






After months of having dingy floors from pulling up the carpet and [surprise!] had hardwood under it, we finally refinished the floor. Which also took about a month. But we painted the walls too in that time. We went from a ugly tan color to a light grey which I LOVE. We also painted the baseboards which come to find out were not white... But off white. And they look SOOOOO much better white. We haven't had the time to do the trim and doors yet, but the doors will be black! woo!

"Skinny" Tomatillo Ranch Dressing

I love LOVE Cafe Rio's house dressing. Its amazing. I've made it at home before and the recipe called for mayo & buttermilk. This time when I made it I used Greek Yogurt & Coconut Almond Milk. It turned out great and I really love it! I think this is something that I will keep on hand at all times!



Here is the recipe:

1 cup Plain Greek Yogurt (I used Chobani)
1 cup Coconut Almond Milk
1 Buttermilk Ranch Packet
1/2 Bunch Cilantro
2 Medium Tomatillo's
1 Jalapeno (without the seeds)
Lime Juice to taste - I used about 1/4 cup, I like mine really lime-y

Mix it all in a blender and blend until smooth. Add more or less milk depending on how thick you like it.

This entire recipe has 215 cal - 28g carbs - 2g fiber - 4g fat - 26g protein!
Which makes each 1/4 cup approx: 13 cal - 2g carbs - <1g -="" 2g="" div="" fat="" fiber="" g="" nbsp="" protein="">

Homemade Bar soap

I got the recipe here. I used about 20 drops of essential oil but it was not enough. I will use at least double next time!


 I did about 80% EVOO and 20% Coconut oil. Next time I will use more coconut oil!


I looked into soap molds, they are really pricey. So I just took a page out of Jillee's book and used an old Tupperware container.



Tada! 


Next was Homemade Diaper Rash Cream



I usually just use Tea Tree Oil & Coconut oil mixed together straight in the container. But then I decided to do a mixture of that, Baby Soap & Distilled water in a little spray bottle. No bum touching & it works like a charm!!!

*Note: During warm months I didn't have to do anything to it but give it a little shake before spraying it on. During colder months it has to be warmed a little. Running it under hot water works great or just store it next to a heat vent ;)

Chocolate "Lava" Cupcakes

For these Lava Cupcakes I used a really easy recipe for chocolate truffles! You pretty much just make a Chocolate Ganache and put it in the fridge over night. 

1 Cup Heavy Cream
2 Cups Semi Sweet Chocolate Chips
Bring the cream to almost a boil and pour over the chocolate chips. Whisk until chocolate is melted and combined into a thick looking chocolate. Cover & put in the fridge overnight. 

The next day get a cup of hot water and a rounded tsp measuring spoon or melon baller. I used the tsp because I don't have a melon baller, but it bent my measuring spoon so next time I think I'll just go get the melon baller. Scoop the chocolate out into balls and put on wax paper. 


While I scooped the chocolate I preheated the over for the Devils Food Cupcake recipe.

 Fill the cupcake liners about half full and place the truffles in the center and push down slightly. Bake according to the directions and let cool.


Whipped topping on these is AMAZING.
