"Skinny" Tomatillo Ranch Dressing

I love LOVE Cafe Rio's house dressing. Its amazing. I've made it at home before and the recipe called for mayo & buttermilk. This time when I made it I used Greek Yogurt & Coconut Almond Milk. It turned out great and I really love it! I think this is something that I will keep on hand at all times!



Here is the recipe:

1 cup Plain Greek Yogurt (I used Chobani)
1 cup Coconut Almond Milk
1 Buttermilk Ranch Packet
1/2 Bunch Cilantro
2 Medium Tomatillo's
1 Jalapeno (without the seeds)
Lime Juice to taste - I used about 1/4 cup, I like mine really lime-y

Mix it all in a blender and blend until smooth. Add more or less milk depending on how thick you like it.

This entire recipe has 215 cal - 28g carbs - 2g fiber - 4g fat - 26g protein!
Which makes each 1/4 cup approx: 13 cal - 2g carbs - <1g -="" 2g="" div="" fat="" fiber="" g="" nbsp="" protein="">

Chicken Tortilla Soup

Since I have been pregnant everything has gotten harder. Including cooking for my family. So I thought I'd share a super easy and super yummy recipe that my sister in law gave me a while back. This has become a favorite in my home. Even more now that I'm carrying baby #2.

Chicken Tortilla Soup

2 Carrots, chopped
1/2 cup Onion
2 Chicken Breasts
1 clove Garlic, pressed
2 tsp Chili Powder
1 tsp Cumin
2 (14 oz) cans Chicken Broth
1 (14 oz) can Stewed Tomatoes
1 Jalapeno, chopped
1 (4 oz) can Green Chilies (fire roasted are my favorite)
4 tsp snipped fresh Cilantro (optional)
1/2 cup Shredded Cheese
1 can Refried Beans
1 cup Corn
4 Limes, sliced
Fritos
Avocado

Heat pan over medium-high heat. Spray with Pam. Add chicken; cook and stir 3 minutes or until no longer pink. Add onion, garlic, chili powder, cumin, carrots, corn & jalapeno. Cook and stir for 2 minutes. Stir in refried beans, tomatoes and chilies. Add broth last. Bring to a boil. Reduce heat and simmer 10 minutes (or until carrots are tender)
Put fritos in a bowl, cover with soup and sprinkle with cheese.

Garnish with cilantro, lime and sour cream. (optional)

I've Created Another One!

Thats right. I have officially created a new blog focusing on one thing.... Food. Yesterday after writing down a recipe on a sticky note that I finally perfected I realized that if I put it away in my big cook book that it would get lost in the mix and I would never see it again. That is when I decided to make a blog for my recipe's etc. After Amir went to bed last night that is exactly what I did. I added a few recipe's that I had saved on my computer plus my sticky note recipe from last night. I still have a bunch more to find and add as well. Click here to see the new blog. Another One About Sami....

Thats right... I have more to say on the subject of my brother, Sami. Last night he was ordained as an Elder in the LDS church. I just have a few pictures from after the fact. Amir and I went but we did not go in with them. Amir was not in a very bright and shiny mood. Which was okay because I stuck my head in the room everyone was in after they were finished (looking for my family, I don't just randomly stick my head places it doesn't belong, haha!) and it was HOT. Like 15 bodies in a small room hot.

After we went out to get icecream but it ended up I was the only one who got dessert. Rice pudding without raisins. mmmmm!

Soooo here are some photo's from the restaurant. Amir is crazy....
